Visiting Colorado for a Winter Weekend Getaway

Normally when someone tells me that they’re going on vacation, I picture somewhere warm, cozy and tropical. It gets cold on the east coast, but I mean… if it’s going to be cold, it could at least be snowy with a view too, right? So myself, my fiancé, and another couple, decided to travel out west to enjoy a Winter weekend getaway in Colorado.

What Made Winter Weekend Getaway in Colorado Memorable?

Staying at an Airbnb in the Mountains

The Airbnb doesn’t necessarily count on this list as a place to go while in Colorado, but there’s now way I was going to do this post without mentioning it. Plus if you ever plan on staying in The Green Mountain area near Colorado Springs, then I highly recommended checking out this Airbnb. When we arrived at the Airbnb my friend and I rushed around checking out the place and headed to the rooms like an episode of Bad Girls Club. It was complete my favorite places were the den, loft, backyard, kitchen, and hot tub. The views were breathtaking and the recent snowstorm that had just hit Colorado made it even more magical. The place was absolutely stunning. Would I stay again? Absolutely. It made our stay in Colorado that much more relaxing!

Snow Biking at Winter Park Resort

Our first full day in Colorado was reserved for snow biking at Winter Park Resort. It took us about 3 hours to travel from our Airbnb near Colorado Springs to the resort. We left a little before the crack of dawn and it was mesmerizing watching the mountains touch the sunset while following us there. Walking around the resort felt like we were visiting one of those Christmas themed towns that you would see in the movies. Except this town had shops on one side and skiiing, snow biking, and a ski lift ride called the Gandala on the other.

We were at an altitude of 10,000+ feet on a mountain in freezing temperatures about to do something none of us have ever done before. The staff at Winter Park Resort was by far the friendliest and most helpful staff I have ever encountered. (special shoutout to Katie, Josiah, & Liz!) They were so attentive to our needs and extremely understanding. The instructional class they did before we took to the slopes played a huge part in helping us get rid of any crazy nerves we had in the beginning. Plus after riding a ski lift while holding a snow bike (trying to maneuver my phone to record it all) with my fingers nearly freezing while trying to do it all sitting in the middle of the air made me feel pretty invincible too. In the end, teamwork meant everything. After surviving 3 adventurous hours of snow biking on the slopes in Colorado, I can check snow biking off of my bucket list! Alexa, play “Who Gon Stop Me” by Jay-Z & Kanye. Lol!

Colorado Springs’ Garden of the Gods

I’ve never been to the Grand Canyon, but I feel like this could be the Grand Canyon’s baby cousin.

On our second full day in Colorado, we stayed in Colorado Springs and visited Garden of the Gods, which is a natural landmark found at the bottom of Pike’s Peak. When we arrived, the first thing we noticed was one of the most popular landmarks, balancing rock. Parking was available throughout the park, but so many people where there that we decided to drive through the park. The entire drive was a “pull over and let me out” moment. We stumbled onto this scenic area that overlooked the south west area of Colorado Springs while outlining the Mountains in the background.

Colorado Night Life at Cork and Cask

That night, we decided to go out for drinks at Cork and Cask, an upscale wine and whiskey bar in Colorado Springs. It was 7pm on a Saturday when we arrived, and it was clear how popular this spot was because it was pretty full. When we walked in, I was swooned by the plush tufted couches and the crystal beaded chandeliers hanging from the industrial ceiling. Although the bar was considered upscale, the vibes were extremely easygoing. We ate before visiting the bar so we kept it light. We ordered a Bavarian Pretzel and I ordered a Red Sangria. Cheers!

Breakfast at Denver Biscuit Company

To kick off our last full day in Colorado, we ate breakfast at Denver Biscuit Company. It was around 9am on a Sunday, so the breakfast crowd was in full effect. We grabbed a seat on the second floor of the Atomic Cowboy building which had a view of the mountains I couldn’t stop staring at while eating. The food was good and plenty. I ordered the Biscuit French Toast and my Fiancé ordered the Strawberry Shortcake Biscuit Plate. Sweet syrupy filled deliciousness.

Shopping at 16th Street Mall

I’ve never truly shopped in a bigger city before, but shopping here made me feel like I was truly shopping in a big city. News flash, we were in Denver and compared to Richmond there was a lot to offer. We only set aside a few hours to see this mall and it was a horrible idea. There was so much there that I feel like we needed a whole day to get through this mall.

Solo Porque Quireo Ir Otra Vez!

We wrapped up our time at the mall with some drinks from Otra Vez and grabbed some food to go. There’s something about the Mexican food in Colorado that just does something to me. Both the food AND the drinks were on point. I would defintiely revisit Otra Vez.

Dining in The Rabbit Hole

Have you ever heard of a hole in the wall? Well, this is basically a hole in the ground and a million times better.

Approximately 8 hours before we arrived at the airport to go back to the east coat we dined by The Rabbit Hole. Our Winter weekend getaway in Colorado wouldn’t have been complete without stopping here to eat. Walking into The Rabbit Hole felt like walking into a luxurious brick subway station where you are seated and served eloquent cocktails and decadent versions of your favorite meals instead of catching the subway. The theme felt very “Alice in Wonderland as an adult who created a luxurious underground getaway to escape the confusing world of adults, eat to her hearts content and have a good time”.

For starters we ordered ribs and for my drink I ordered The White Rabbit Martini. I wish we ordered two servings of ribs because they disappeared as soon as they hit the table. The White Rabbit Martini was so good that I had to share it, and it quickly became our tables favorite. It had the perfect sweet combination of vanilla, coconut and cream. The flaming marshmallow in the middle was like the icing on the cake plus I’m a sucker for aesthetics. For dinner, I ordered the most memorable Mac & Cheese to have ever touched my taste buds. The Grada Padano sauce was very subtle without feeling to greasy like most other cheeses and paired perfectly with the Rigatoni noodles and chicken. My biggest regret is not being able to eat it all. Despite my full stomach, we still ordered and devoured a Carrot Cake drizzled in caramel for dessert.
